Thomas, Maru Detroit’s Store Manager, is a quintessential example of what it means to exude hospitality and leadership. Most days you can find him communicating with his team and guests with humor, passion and the occasional movie quote, all the while encouraging those to be the best versions of themselves.

We asked Thomas a few questions about his Maru story + this is what he had to say:

Q: How long have you been working for Maru? What is your Maru story? 

“I have been with Maru for 5 years and 6 months.  I got involved with Maru when my friends and I used to eat and drink there for a night out.  They had great vegetarian options compared to most sushi restaurants which was great at the time.  When Robert brought one to Grand Rapids, I knew it was fate and applied multiple times to show them how badly I wanted to work with Maru.”

Q: What is your favorite part of working at Maru?

“My favorite part of working at Maru are the people.  There is an energy that radiates from those who enter the building.  I have always enjoyed how Maru felt socially.  The guests and staff are always so great.  I connect with more people than I ever have before and it feels like a consequence of what we do as a team.  It has inspired me to work harder, focus, and challenge myself.  There are a lot of people I am proud to say I have worked with, had the pleasure of knowing and watch grow.  I, myself, have had a great opportunity to grow in ways that I owe to many of those that have been with this company.  While many company can sustain life, this company changed my life.”

Q: As a successful store manager, what would be your advice to those who are pursuing hospitality?

“My advice is to live Hospitality.  This is not unique to the industry, but it certainly has more relevance to the business model.  Believe in it and you will inspire others.  Push yourself to grow because that will help others see how to do so.  It’s how we respond to challenges that really define us.  Give constructive feedback to others and receive some about yourself.  Communicate your expectations directly and personally.  And most importantly, have fun because that’s the only way to take life seriously.”

how to roll your own sushi

 

You can make your favorite Maru rolls at home, too! 

Watch and learn as Chef Edie rolls up the Atlantic.

Step 1 – Gather your ingredients. You’ll need sushi rice, nori (seaweed paper), fish, vegetables, wasabi and ginger. We used ingredients for the Atlantic – salmon, red pepper, garlic mayo and furikake seasoning.

Step 2 – Spread the rice evenly on the nori.

Step 3 – Place your ingredients in the middle of the nori.

Step 4 – Roll the sushi roll up with your hands and with a maki su until it seals.

Step 5 – Cut the roll into bite size pieces. Sprinkle with furikake seasoning or sesame seeds.

Step 6 – Place the roll on a plate, add ginger and wasabi. Enjoy!

What a year it’s been!

Maru officially opened its doors to Detroit on November 11, 2016, and we’ve been overwhelmed by the love and support this city has shown us since then.

To show our appreciation, guests can enjoy a dark chocolate truffle or vanilla bean cheesecake on us this weekend! Available Friday, November 10 to Sunday, November 12.

From leading the team on the sushi line, to the small tastes she delivers to guests at the sushi bar, Edie’s creative spirit and positive attitude shine in her each and every interaction.

We asked Edie a few questions about her job, how she got where she is and what motivates her each day. This is what she had to say:

Q: What is it that you love the most about Maru?

“Maru gave me a ton of opportunity when I first started and continues to every week.  This place really allowed me to discover and develop a passion I’ve had for most of my life: food and experimentation. On top of that, I get to expand on my creative energies every day! I’ve never worked for a company that puts as much into me as I into it.”

Q: How did you get where you are now?

“I needed change. I went out and took a chance to learn something I had a lot of passion for. My former head chef gave me a chance, hired me and I realized I was pretty good at what I was doing, so I practiced. I studied every damn day. It became important for me to develop my flow and I just kept learning and showing up with improvement.”

Q: As a woman head chef, do you have any advice for women starting out in a new adventure or career?

“Yes! Relentlessly pursue your goals. Understand why certain people give you push back and question them. Be contemplative and go out and make mistakes.”
